Noodles used for ramen in Japan are largely divided into straight and curly noodles. These noodles are used differently depending on their compatibility with soup.
Straight noodles have less space between them and can absorb more soup, so they mix better with soup than curled noodles. On the other hand, curled noodles are larger in volume due to their curled shape, so when eaten, the noodles fill the mouth and are very satisfying.
